Chapter 35.1
“But…”
April raised her hand to stop him.
“Oh, of course, I’m not hiring you right away. I’ll post a proper job announcement later, so if you’re interested, please apply then. We’ll conduct a formal interview.”
“….”
“I’m just asking you to consider my cafe when you’re looking for a new job in the future. Well then, I’ll be going now.”
Finishing her words, she smiled again and walked past Edmund, retraced her steps back the way she had come. Her heart pounded happily.
‘I hope he comes.’
She had told Edmund that she would only hire him if he passed the interview, but in truth, she knew that if Edmund applied, she would hire him.
He had the skills and shared her passion for coffee to that extent.
‘I’m looking forward to it.’
That day, April returned to the mansion and drafted the recruitment notice, and with Claude’s help, she placed an advertisement in a newspaper in the capital the following day.

The reputation of Winterville was remarkable. Just the fact that it was a cafe backed by his investment was enough to have barista applicants lining up.
“What’s the difference between Arabica and Robusta?”
“Well, aren’t they essentially the same coffee?”
“What should the temperature of the glass be when I need to prepare a hot beverage?”
“Do we have to pay attention to the glass temperature?”
“What happens when you brew espresso with coffee beans that have a lot of gas?”
“Are there gases in the coffee beans?”
April rubbed her forehead. Of course, there weren’t only applicants who gave such nonsensical answers. There were undoubtedly those whose answers appealed to her.
“How would you extract a less bitter espresso from coffee with a lot of gas?”
“It should be extracted at a low temperature below 90 degrees.”
“That’s right. You know a lot.”
“I studied abroad in the Holy Kingdom to learn about coffee.”
Still, they didn’t get along with April on important things.
“What if a customer asks for sugar because the coffee is bitter?”
“I would explain that coffee was meant to be bitter.”
‘…No, that’s not the answer I want.’
Seeing April scrambled her thoughts after the applicant left, Lloyd, who had been helping her from the side, asked in surprise.
“Aren’t there any applicants you like? They seem to have answered well.”
“Yes. They may understand the theory well, but our values don’t align.”
“But isn’t it true that coffee is supposed to be bitter?”
“No. While coffee can have bitterness, it’s not inherently bitter.”
Of course, there was no coffee without any bitterness at all. But was it really right to insist that coffee was naturally bitter to a customer asking to reduce the bitterness? If someone asked Sofia to make a cake less sweet, would she say, ‘Cakes are supposed to be sweet’? April could confidently say that it wouldn’t be the case.
‘If you roast the coffee beans lightly and shorten the extraction time, you can reduce the bitterness…’
She believed that it was the barista’s job to cater to the customers’ preferences.
Not imposing one’s own thoughts.
Of course, her thoughts weren’t necessarily the only correct ones. Someone could criticize her for thinking this way. Nevertheless, she wanted to make sure that at least those who work together should share the same values.
She had met all the constantly incoming applicants, but there wasn’t a single person she was 100% pleased with.
Moreover…
‘Is Edmund not coming?’
At the thought, she stared at the closed door.
Edmund, whom she had secretly hoped would come, was nowhere to be seen. He said he was going to quit, but did he continue to go to that cafe? Or had he started learning under his father, who was said to import coffee? Either way, it was a regrettable situation for April.
‘Of course, I should respect Edmund’s decision, but…’
It was sad because it felt like she had lost a good talent.
“Well, Miss April. It seems like we don’t have any more applicants…”
April sighed as Lloyd glanced at her from the side.
“Yes, I suppose so. Then…”
It was just when she was about to reluctantly choose the person who had impressed her the most.
“I’m sorry. I’m very late.”
The door opened, and a handsome blond young man entered.
It was Edmund Hallion.
With his neatly slicked-back hair now falling casually around his face, he seemed even livelier than when she saw him at the cafe.
“Have I missed it?”
April beamed and gestured towards the chair in front of her.
“No, please have a seat.”
“Thank you.”
She concealed the corner of her mouth that kept trying to rise and posed her question.
“There are different types of espresso. What are they?”
“There’s Ristretto, Espresso, and Lungo. They’re about 20ml, 30ml, and 40ml, respectively, including crema.”
He answered even the questions that weren’t asked effortlessly. The more she saw of him, the more she liked him. Still, this was just the basics.
April asked a more in-depth question.
“What’s the difference in taste between Ristretto and Lungo?”
“Ristretto has less bitterness and a stronger acidity. Whereas Lungo has a stronger bitter taste, and the concentration is higher in Ristretto.”
After that, a few more questions were asked. Each time, Edmund answered with unwavering certainty, just as she wanted, though the most important question remained.
