Sophia was taken aback by her sudden suggestion, but she succumbed to April’s serious expression and soon led her to a small kitchen.
“Normally, we aren’t supposed to let outsiders in…”
She pulled out the coffee beans, still sobbing.
“What do we care about rules? Anyway, the rules aren’t followed when it comes to me.”
April glanced around while listening to Sophia seriously.
“Do you happen to have any whipped cream?”
Sophia raised an eyebrow in bewilderment.
“Whipped cream? Didn’t you say you needed coffee?”
“I’m going to make coffee with whipped cream.”
Saying so, April chuckled mischievously.
‘It’s definitely Viennese coffee with Sacher-Torte.’
Viennese coffee, otherwise known as Einspänner.
Along with Sacher-Torte, it was one of Austria’s quintessential desserts.
The method of making Einspänner was simple—putting whipped cream on top of an Americano. However, because the aroma would dissipate when you extracted the coffee first, April decided to make the whipped cream first. Since they didn’t have an electric mixer here, it would take a long time to whip the cream until it thickened.
In the meanwhile, although still dumbfounded, Sophia diligently retrieved the cream, a bowl, sugar, and a whisk made of twigs.
April added an appropriate amount of sugar to the whipped cream and began whipping it. Because she was more accustomed to using an electric whisk, naturally, she must have looked clumsy in the eyes of Sophia, who was a professional baker.
Sophia washed her hands and took the whisk and bowl of whipped cream from her.
“I’ll do it. It’s going to take a while to do that.”
“Oh, thank you. I was planning to make it and serve it to you.”
“It’s a little strange to leave the kitchen entirely to an outsider.”
Saying so, she began to whisk the cream while muttering softly. April, watching Sophia whisk the cream with a combative spirit, hurriedly spoke.
“Don’t whip the cream too stiff. Stop when it’s slightly thickened.”
“Thickened enough for the cream to drip?”
“Yes, I’ll put it on top of the coffee. Oh, of course, you can whip it stiff if you prefer, but I like it smoother.”
“On top of the coffee? Why in the world… I get it for now.”
She understood Sophia’s puzzled reaction.
‘Here, they don’t usually put fresh cream or whipped cream on top of coffee, so it might seem unfamiliar.’
However, she was confident that once they tasted it, they would love it. April focused on the coffee with anticipation.
First, she ground the coffee beans in the grinder.
‘When I meet an alchemist, I should make an automatic grinder as well.’
After grinding the coffee beans, she placed them in a portafilter, tamped them, and then pulled the espresso shot.
‘Since we’re adding cream, it’s better to have it stronger than Americano. Also, even though the coffee that serves as the base for Einspänner sometimes has sugar added, let’s skip the sugar this time because we’re having it with cake.’
Rather than pouring as much water as usual when making an Americano, April poured less to complete the coffee.
Just as they finished, Sophia presented the cream that had taken on a somewhat formed shape. As she finished the coffee using less water than she would normally add to an Americano, Sophia handed the cream that had taken on a somewhat formed shape. It was the perfect creamy texture as per her earlier request — soft yet firm.
April added the cream to the Americano.
Finally, the most important thing remained. She closed her eyes and fervently prayed.
‘Please, may Sophia not be sad.’
Then, she held out the Einspänner, which she had now completed with the spell, to Sophia.
“What is this?”
“It’s called Einspänner.”
“Einspänner? Doesn’t that mean a carriage pulled by one horse?”
“That’s right. There’s a story that originated from the time when coachmen, who didn’t even have time to sit down and drink coffee, so they drank it standing up.”
“That’s unusual.”
“Isn’t it? It should go well with that Sacher-Torte… I mean, with that cake you made, Sophia.”
When April mentioned the cake, she looked embarrassed.
“Though considering I’ve already dropped the cake once, eating it with…”
“You ate it too, Sophia.”
“I ate it because I made it, but…”
She closed her eyes tightly and exclaimed.
“I can’t give this to someone else.”
“But I want to taste it. Wouldn’t it be okay to eat it on the good side?”
“Still…”
Turning to Sophia, who hesitated, April asked sincerely.
“Isn’t it something you made with the hope that someone would enjoy it?”
“….”
“Me too. I hope other people can enjoy and be happy with the coffee and dessert I make, so that’s why I made this coffee for you as well..”
She smiled as she made eye contact with Sophia, whose eyes were wide in surprise.
“I also want to taste a cake made with Sophia’s sincerity.”
