Unable to resist, April picked up one of the cookies, and as she expected, it cracked and broke into three pieces. Nonetheless, she handed the slightly warm cookie to Asher, who eagerly grabbed it and took a bite.
“It’s chewy right now, but it will have a fluffy texture once it’s fully cooled. So, wait until it’s completely cooled to eat more.”
For today’s cookies, she used a type of flour called ‘medium gluten flour,’ which was between all-purpose flour and bread flour. Unlike the usual flour used for cookies, this one had some gluten, giving it a slightly different texture.
That was the appeal of the cookies.
On the following day, April and Asher packed the fully-cooled cookies and left the cafe.
Their first stop was the bakery.
