Chapter 28.1
“Really? Then, let’s go with that.”
“But what are you going to do with this?”
“Just wait and see.”
April quickly made a dalgona.
The second dalgona was easier to make than the first. As she quickly poured the dalgona she had made onto a cookie sheet and pressed it firmly again with a rolling pin, April pressed a heart-shaped cookie cutter Asher had chosen onto the flat dalgona. Unlike when making cookies, she only pressed it just enough for the dalgona not to separate.
In the center of the dalgona, where April had pressed it, Asher clapped his hands together.
“Wow. It’s pretty.”
“This isn’t the end. Mr. Hans, do you happen to have a toothpick?”
“Toothpick? Just a moment.”
While Hans fetched the toothpick, April made another dalgona. This time, she shaped it like a star.
Although Asher might have been curious about her secretive behavior, the child stayed close to the table and waited quietly. His eyes sparkled, and his chubby cheeks were twitching. No matter how you looked at him, he looked like an obedient puppy.
After a while, Hans handed over the toothpick and asked.
“What are you going to do with this?”
Asher also asked.
“That’s right. What are you doing, sister?”
“I’m going to do it like this.”
Saying so, she carefully poked the dalgona shaped like a star with the pointed end of the toothpick. Little by little, small holes began to appear in the thin parts.
“If you remove the shape cleanly, we will give you another dalgona.”
Asher quickly grabbed the toothpick.
“I want to try that!”
The child stuck out his cherry-like lips and concentrated.
“Can you make one for me too, Miss April?”
“Of course.”
April happily made a fourth dalgona for Hans. The moment she shaped it into a gingerbread man according to his preference, Asher exclaimed, “Acck!” When she turned around to see what was going on, she could see the child with a sullen look on his face, like a puppy with floppy ears.
“What happened?”
“The heart is broken.”
As the child said, one of the convex parts of the heart was cracked.
‘It’s not easy because of those curves.’
April gently patted Asher’s back, who looked like he was about to cry at any moment.
“It’s okay. I’ll make it again for you.”
For the next one, she used a triangle cookie cutter to make it easier for the child to cut.
While Asher and Hans were focused on the dalgona, April skillfully broke the dalgona that Asher had failed to make into appropriate pieces. It was intended to be a topping for the dalgona coffee.
“Sister! I did this!”
“I did it too.”
After making new dalgona for the two men, who smiled proudly as they handed over the completed pieces, she began preparing for dalgona coffee in earnest. First, she pulled two shots of espresso, but a sense of fear suddenly overwhelmed her.
‘Can I use espresso?’
In Korea, recipes using instant coffee mix were trendy. Since there was no instant coffee mix here, she decided to make espresso instead. However, espresso contained more water compared to mixing water with instant coffee. Would meringue form properly with espresso, which had a higher water content?
‘Well, I’ll give it a try. If it doesn’t work, then it doesn’t.’
At the thought, she skillfully poured espresso into a large bowl and skillfully used a frother as if it were her own kitchen.
Hans, who was working on dalgona pieces again with Asher, became intrigued.
“What are you going to do this time?”
“Oh, I’m going to make dalgona cream.”
“Dalgona cream?”
“Yes! When you mix coffee with sugar and stir, the brown coffee turns into yellow cream, which is called dalgona cream.”
“Oh, it’s the same principle as making meringues! Is that what Miss April ate in your hometown, too?”
“Yes, you could say that.”
April replied with a slight sting in her voice and added sugar.
‘The ratio of instant coffee mix, water, and sugar was 1:1:1. Should I put only half the amount of sugar? No, that would be too little. Let’s go with a 1:1 ratio of espresso and sugar.’
Usually, a single shot of espresso was thirty milliliters. Since it was a double shot, it would be sixty milliliters.
‘Then, let’s start with sixty grams of sugar.’
The next moment, she measured the sugar, put it in a bowl, and started whisking with a frother. Asher, who was carving his piece of dalgona nearby, began cheering.
“Sister, fighting!”
Hans asked with concern in his voice.
“Oh my, are you trying to do it with those thin arms? You might get tired. Let me do it.”
April refused with a determined face.
“No. It’s meaningless if I don’t do it myself.”
This was a battle between her and Hannah. While it would be easier with Hans’s help, it felt like she would somehow lose if she took it. In the meanwhile, Hans was still worried about her, but he no longer insisted on doing it himself.
