Sophia Sacher, who had gone to her hometown, has returned. Until she found a place to live, she decided to stay in the guest room of Duke Winterville’s estate for a while, but she felt restless even as she watched the servants move her belongings.
“Are you sure it’s really okay for me to stay here?”
“Yes, the Duke has given his permission. You can stay as long as you need.”
“But still…”
“It’s unlikely you’ll ever run into the Duke anyway.”
Sophia’s face brightened as she heard April’s whispered words.
“Then, I’ll be in your care for the time being.”
The two of them caught up in the parlor attached to April’s room.
“Weren’t your parents worried when you told them you quit being an imperial baker?”
“Not at all. If anything, they seem to like that I’ve found what I want to do.”
Sophia spoke in an excited voice and took a sip of the cappuccino that April had made for her.
“Wow, this is delicious. Is this a new kind of coffee?”
“Yes, that’s right. It’s a coffee called cappuccino.”
“You’ve been busy while I was gone. I’ve never seen coffee like this before.”
“Oh, Hannah helped me a lot. Oh, by the way, there’s something I wanted to show you, Sophia.”
“What is it?”
April just smiled without saying a word and headed to the kitchen with her, where she showed her the automatic whisk that Hannah had made a month ago. As Sophia saw the whisk spinning on its own with a whirring sound, her eyes widened in amazement.
“Wh-what is this?”
“It’s an automatic whisk. With this, you can easily make meringue.”
“How is this possible?”
“I’m not sure about the mechanics, but Hannah said it was surprisingly easy to make. Oh, Hannah is an alchemist who will be helping our cafe in the future.”
April also explained that she made dalgona coffee for Hannah in exchange for the whisk. However, Sophia was already so fascinated by the automatic whisk that she barely listened to the explanation.
“That’s great! I was planning to make you a cake that I developed while I was in my hometown, and this will make it easier!”
“Oh, a new recipe?”
Hans was also interested.
“Yes! This time, it’s a dessert made using coffee…”
Sophia began listing the ingredients for the cake. She mentioned common ingredients like eggs, flour, and sugar, and then suddenly, an unfamiliar ingredient came up.
“Oh, and we’ll also need mascarpone cheese and cocoa powder. And espresso, too!”
April, who was listening roughly, perked up at ‘mascarpone cheese.’
‘…Wait a minute, could this be tiramisu?’
Tiramisu.
This dessert, which meant ‘pick me up’ in Italian, paired strong coffee and smooth mascarpone cheese in perfect harmony. True to its name, it lifted your spirits with its unique blend of sweet and slightly bitter flavors.
‘Come to think of it, I’ve never had tiramisu here.’
They didn’t even add sugar to their coffee, so the idea of making a dessert with coffee seemed unthinkable. Just the thought of being able to eat tiramisu already ‘picked up’ April.
“We’ll start by making Savoiardi.”
Savoiardi, also known as Ladyfingers, were cookies shaped like elongated fingers. They were known for their ability to absorb moisture well, and Italians sometimes dipped them in cafe lattes. Once the ingredients were ready, Sophia started making the dough.
The first step was to whip the egg whites into meringue, and Sophia exclaimed in admiration as she used an electric whisk.
“I never thought there would be something this convenient. Being a woman, I always found it harder to whip meringue than men because it requires strength. But with this, I don’t need any strength at all, and I can whip meringue much faster!”
“I’m glad Sophia is happy.”
Sophia, who made the dough with the meringue she made in an instant, used a piping bag to pipe the dough into the oven mold.
“Now, all that’s left is to bake them.”
While the Savoiardi was baking in the oven, she prepared the cream. It was a mixture of mascarpone cheese, egg yolks, and sugar, blended to her own proportions.
Meanwhile, April eagerly brewed espresso while waiting for the Savoiardi to cool down.
“Hans, do you have square and deep plates? This cake is meant to be assembled and eaten directly on the plate.”
“Hold on a second.”
While Hans searched for suitable plates, Sophia soaked the Savoiardi thoroughly in espresso.
“The more it soaks in, the richer the coffee flavor becomes and the more delicious it is. It’s delicious even when the Savoiardi gets a bit soggy.”
Once Hans brought the plates, Sophia arranged the soaked Savoiardi on them. She layered them with the smooth cream, then repeated with another layer of Savoiardi and cream on top. Finally, she sprinkled cocoa powder on top and placed the mint leaves Hans had brought in the center.
“Okay, it’s done.”
